This salad is easy to make and refreshing to eat. Goat cheese, jalapeños and mandarins enliven the flavor.
Makes 6 Servings
Cooking + Prep Time: 25 minutes
Ingredients:
- 1 bunch of fresh cabbage - pluck the leaves from the stems
- 1 seedless jalapeno, thinly sliced, whole
- 3 tangerines, peeled and diced
- 4 ounces of goat cheese
- 2 tbsp. olive oil
- 1/4 cup fresh orange juice
- 1 clove of grated garlic
- 1 teaspoon of sugar, granulated
- Kosher salt, to taste
- Pepper, ground, to taste
- 1 tablespoon. sour cream, low in fat
Instructions:
- Take small handfuls of kale leaves. Cut them into thin slices. Continue until you have a large pile of thinly sliced cabbage.
- Combine the oil, orange juice, sugar and garlic in a glass jar to make the dressing. Add kosher salt and ground pepper, to taste.
- Shake and combine all the ingredients. Add the sour cream. Shake once more until a creamy sauce is obtained.
- Toss the cabbage in half of the dressing for about a minute. Add the mandarin pieces and sliced jalapeños. Stir until well blended. Taste and add more seasoning, to taste.
- Chop the goat cheese. Put them in salads.
- Set the extra dressing aside. To serve.
