Basic Fathead Dough Recipe Ingredients


You can make fathead dough with almond flour or coconut flour. Below are the basic ingredients for each version. There are also some common ingredient variations used for some recipes.

INGREDIENTS FOR ALMOND FLOUR VERSION

  • 1½ cups (6 ounces) shredded mozzarella cheese
  • 1 ounce (2 tablespoons) cream cheese, cut into cubes
  • 1 large egg, whisked
  • ¾ cup (3 ounces) finely ground blanched almond flour

INGREDIENTS FOR COCONUT FLOUR VERSION

  • 1½ cups (6 ounces) shredded mozzarella cheese
  • 1 ounce (2 tablespoons) cream cheese, cut into cubes
  • 2 large eggs, whisked
  • ⅓ cup (1.3 ounces) coconut flour
HOW TO MAKE THE DOUGH

There are three basic steps to prepare fathead dough: 
  1. melt the cheeses, 
  2. knead the dough, and
  3. use the dough as called for in your recipe. Each step has a couple of methods you can use. I’ll cover all of them below and you can choose the methods you prefer.

STEP 1: MELT THE CHEESES TOGETHER

MICROWAVE METHOD:
  • Combine the shredded mozzarella and cubed cream cheese in a large bowl.
  • Microwave for about 90 seconds, stirring halfway through, until smooth and easy to stir. Stir again at the end to make it uniform.

STOVETOP METHOD:
  • In a double boiler, combine the shredded mozzarella and cubed cream cheese.
  • Heat for a few minutes, stirring occasionally, until smooth, easy to stir, and uniform.See Figure 1 for the melted cheese.
STEP 2: KNEAD THE DOUGH

BY HAND METHOD:
  • If the recipe requires baking powder and/or sweetener, stir these with the flour in a small bowl. (Skip this step if making the original recipe without modifications.)
  • Stir the beaten egg(s) and flour (or flour mixture) into the cheeses in a large bowl.
  • Knead with your hands and squeeze rapidly through your fingers, until a uniform dough forms.
FOOD PROCESSOR OR STAND MIXER METHOD:
  • Add the flour to a food processor fitted with either the metal blade or a dough blade, or a stand mixer fitted with a dough hook. If the recipe requires baking powder and/or sweetener, add them as well and turn on the machine to mix together.
  • Add the egg(s). Turn on the food processor or stand mixer again to mix.
  • Add the melted cheese mixture (make sure it’s still hot enough to be easy to stir) and position the blade or dough hook in the center of the cheese. Turn on the food processor or mixer again and keep it running until a uniform dough forms. (You may need to stop to scrape any flour left on the sides or bottom away from the blade or dough hook.)See Figure 2 for the dough.
STEP 3: MAKE THE RECIPE AND BAKE
Once the dough has come together and is uniform, you can follow the recipe as directed to form it into the shape you need and bake it. However, if it’s too sticky or can’t be formed into a ball (Figure 3), you may need to chill it, use oiled hands to work with it, or both.
