Spicy Shrimp Wrap

4 buckwheat tortillas
1 pound shrimp, peeled
5-8 cherry tomatoes, cut into two 
1/2 teaspoon Italian seasoning 
1 avocado, chopped
½ cup green peas 
1 tablespoon olive oil 
Arugula leaves
1 lemon, sliced

Heat the oil in a pan over medium heat.
Once the oil is hot, add shrimp and cook for 4-5 minutes until cooked. 
Season with Italian seasoning and mix well.
Once cooked, remove from heat.
Toss the tortilla on a griddle for 2-3 minutes. 
Lay the tortilla on a plate.
Spread arugula leaves on each tortilla.
Divide shrimp, avocado, tomatoes, and peas on each tortilla. 
Drizzle lime juice, paprika on each tortilla and serve!
