Grilled Salmon with Herb Mustard Glaze

This is a great tasting salmon dish that you can make whenever you crave something fresh during the hot summer months. It is so delicious that even the fussiest of eaters will not be able to resist its taste for long.

Cooking time: 20 minutes


·         2 cloves of garlic

·         ¾ teaspoons of rosemary leaves, fresh and chopped

·         ¾ teaspoons of thyme leaves, fresh and chopped

·         1 tablespoon of white wine, dry

·         1 tablespoon of extra virgin olive oil

·         2 tablespoons of Dijon mustard

·         2 tablespoons of wholemeal mustard

·         Cooking spray

·         6, 6- to 8-ounce salmon fillets

·         A pinch of salt and black pepper

·         6 lemon wedges, fresh


1. In a food processor, add the garlic cloves, chopped rosemary leaves, chopped thyme leaves, dry white wine, extra virgin olive oil, Dijon mustard and whole grain mustard. Blend at maximum speed until the mixture is smooth. Transfer this mixture to a small bowl.
2. Add the remaining whole mustard and toss to combine. Set this compound aside.
3. Preheat the oven for grilling. While the oven heats up, line a large baking sheet with aluminum foil. Grease with cooking spray.
4. Arrange the salmon fillets on the pan and season with a pinch of salt and black pepper.
5. Transfer them to the oven and cook for 2 minutes.
6. After this time, pour the mustard sauce over the salmon fillets.
7. Return to the oven to cook for 5 minutes or until the salmon is golden and completely cooked. Remove from the oven and serve immediately.
