Grilled Salmon with Citrus Fruits

 

This is a salmon dish you can make at your next family barbecue. Grilled to perfection, even the fussiest of eaters will have nothing bad to say about this dish.

Yield: 4 servings
Cooking time: 40 minutes

Ingredients for the triple citrus glaze: 

¾ cup of fresh orange juice
¼ cup of lemon juice, fresh
¼ cup of lime juice, fresh
¼ cup of chicken broth
1 clove of garlic, minced
2 tablespoons of orange marmalade
2 tablespoons of soy sauce
1 tablespoon of rice wine vinegar
1 tablespoon of brown sugar, light and packaged
1 tablespoon of butter
A pinch of salt and black pepper


Ingredients for the grilled salmon: 

Extra virgin olive oil, for brushing
4 6-ounce salmon fillets, 1 inch thick
A pinch of salt and black pepper

Instructions:
1. First, prepare the glaze. To do this, add all the ingredients to a medium saucepan over medium heat. Bring to the boil. Once it boils, reduce the heat to low and simmer for 15-20 minutes or until syrupy.
2. Then Season with a pinch of salt and black pepper.
3. Then preheat an outdoor grill over medium or high heat.
4. Brush both sides of the salmon fillets with a drizzle of olive oil. Then Season with a pinch of salt and black pepper.
5. Arrange the fillets on the grill and grill for 4 minutes on each side, taking care to brush with the glaze during the last 4 minutes of cooking.
6. Transfer the grilled salmon to large serving plates. Sprinkle with the remaining glaze and serve immediately.
